A really sweet-tasting herb that can be used in desserts and drinks. 

Stevia is 300 times sweeter than sugar. The stevia plant belongs to the genus Chrysanthemum, and originates in the north-eastern parts of Paraguay. The natives of Paraguay and Brazil have known the intense sweetness of the plant for centuries, and have always used its leaves to sweeten their food and beverages. 

Due to its unique sweetness, stevia is also known as the honey herb. Today, stevia is cultivated in many parts of the world, in South America, Asia and Australia, among others, widely used as a calorie-free option for sugar. For example, stevia can be used to sweeten natural yoghurt or smoothies. 

Stevia can also be dried. Hang bundles of stevia in a dry and warm place for about a week. Then crush the leaves and store in an airtight container. Dried stevia retains its sweetness for about a year.

It is advisable to start cutting stevia early. When the plant is about 4-8 cm high, cut the top pair of leaves. 

Stevia can be harvested about 6 weeks from sowing. 

Harvest by cutting the stem. Over time, stevia will grow branches and become more lush. It’s important to cut and prune stevia as it makes the leaves sweeter. Don’t allow the stevia to bloom, as this will dilute its sweetness.
